Tangy Rhubarb Compote

Springtime at it's best! This is so good on grilled pork, cheese boards, or topped on your favourite ice cream.
This recipe makes 2 cups approx time: 20 mins
Ingredients:
1/2 lb rhubarb stalks
1tbsp of butter
1/4 cup sugar
1/2 inch grated fresh ginger
2 tsp apple cider vinegar
Directions:
Add all ingredients to a saucepan on medium heat for about 15 mins until desired consistency. We like ours quite smooth but if you like a more chunky sauce, cook for less time.
