Rosé and Herb Crackers

We know it's summer, and that usually means consuming bottles of rosé. This is a twist on the traditional- cooking with it! Try these super easy crackers, they will brighten up any cheese board out there. Of course, enjoy with a glass of rosé.



This recipe makes 24 crackers, 2 different flavours

approx time: 30 mins


Ingredients:

1 and ½ cups all purpose flour

1 teaspoon coarse sea salt

1 teaspoon sugar

1/2 Tbsp fresh basil, finely chopped

1/2 tbsp pine nuts, ground 1/2 tbsp fresh thyme 1/2 tbsp flax seed 1 and ½ tbsp olive oil

½ cup rosé or white wine

extra sea salt for topping if desired


Preheat oven to 500º.

Start by making the dough. Combine flour, salt and sugar in a mixing bowl. Add olive oil and wine and knead until combined. Turn dough out onto lightly floured surface. Separate the dough into 2 balls. In the first ball, knead the basil and pine nuts into the dough. In the second ball, knead in the thyme and flax seeds. Roll the dough out until as thin and even as possible.

Cut with pizza cutter or sharp knife into squares. Sprinkle with sea salt and prick with a fork a couple of times. Place cut squares onto parchment lined baking sheets. Place sheets into oven and immediately turn down oven to 425º. Bake until golden brown approximately 12-15 minutes.

Serve with your favourite local cheese and a glass of rosé of course! Enjoy! xx
