Kinda Authentic Margarita Pizza

This isn't really a recipe- it's more of a post to show that any non-Italian can make seriously good pizza with the right tools.
This recipe makes 4 single size pizzas. We find the less ingredients the better. The crust stays crisp and the flavours all come together and shine.
Special tools: Outdoor pizza oven such as an Ooni. If you don't have one of these, you can always use an oven and a pizza stone.

Ingredients:
1 bag store made pizza dough 1 14oz can good Italian roasted tomatoes 2 tbsp tomato paste 1 tsp sugar 1 crushed garlic clove Salt and pepper to taste 2 tbsp fresh herbs such as thyme 00 Flour for dusting 1/2 cup fresh basil 1 large ball of good quality buffalo mozzarella
First step is to let your dough come to room temperature and rise. This usually takes about an hour. Cut into 4 pieces and cover it lightly with plastic wrap so it doesn't get a hard crust.
Second step is to make your sauce. In a small blender, combine tomatoes, paste, garlic, salt and pepper to taste, sugar and a tbsp of your fav herbs. You can also add roasted onions if you'd like more of a kick.
While the pizza oven or regular oven is heating up to 400ª, turn out your dough onto a well floured surface. Using our expert technique seen in the video, "drive the bus" and "parachute" the dough until it is very thin but doesn't break apart. It's ok if holes appear, just pinch them back together.
Once the dough is stretched, place it on well floured pizza peel or heated stone.
Place desired toppings onto pizza starting with the sauce.
Cook in oven until cheese bubbles and crust is brown. Outdoor oven time is approx 3 mins and indoor is approx 10 mins.
