Killer Ramp and Chorizo Quesadillas

This recipe serves 4
Ingredients:
12 ramps
4 chorizo sausages, or mild if you do not want them spicy
2 cups grated Monterey Jack cheese, add more or less depending on how cheesy you like your quesadillas
4 large tortillas
Sour cream for serving
2 tablespoons olive oil
Directions:
Slice your ramps, finely chop the white bulb and green leaves. Set aside in a medium bowl.
Remove casing from sausage and break up into small pieces. Set aside.
Heat large frying pan over medium- high heat and add chorizo to pan. Sauté until fully cooked, about 5 minutes.
Meanwhile, grate cheese and set aside.
Remove chorizo from pan and add ramps. Sauté in leftover chorizo oil for approximately 3 minutes.
In a large bowl, mix cooked chorizo, sautéd ramps and about 1 cup of grated cheese together. Mix until mixture is combined.
In a clean frying pan, add about 1/2 tablespoon of olive oil and 1 large tortilla. Add chorizo mixture onto one half of the tortilla and fold it over.
Flip when one side of tortilla is golden-brown and cook until the other side looks the same.
Remove quesadilla from pan and repeat with remaining ingredients.
Cut quesadilla into three slices and serve with sour cream.
